Description

Chocolate Banana Baked Oats are a wholesome and indulgent breakfast made with oats, cocoa powder, ripe bananas, and chocolate chips. This easy recipe delivers a rich, fudgy flavor that feels like dessert but provides nourishing energy to start your day.


Ingredients

2 cups old-fashioned oats

1/4 cup cocoa powder (Dutch processed or unsweetened)

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups unsweetened vanilla almond milk (Silk or Califia Farms)

1 cup mashed ripe bananas

1/4 cup pure maple syrup

1 tablespoon melted coconut oil

2 large eggs

1 1/2 teaspoons alcohol-free vanilla flavor (Simply Organic Alcohol-Free Vanilla Flavor or Watkins Clear Vanilla Flavor)

1/3 cup chocolate chips, plus extra for topping

Flaky sea salt for finishing


Instructions

1. Preheat oven to 350°F and grease an 8×8-inch baking dish with nonstick cooking spray.

2. In a large bowl, combine oats, cocoa powder, baking powder, and salt.

3. In another bowl, whisk together almond milk, mashed bananas, maple syrup, melted coconut oil, eggs, and vanilla flavor.

4. Pour the wet mixture into the dry ingredients and stir until fully combined.

5. Fold in chocolate chips, reserving a few for the top.

6. Pour the mixture into the prepared baking dish and sprinkle with remaining chocolate chips.

7. Bake for 35 minutes, or until the center is set.

8. Remove from oven, sprinkle with flaky sea salt, and cool for 5 minutes before serving.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 5 days.

Freeze individual portions for up to 2 months for meal prep convenience.

Reheat servings in the microwave for 30–45 seconds before eating.

To make this recipe vegan, replace the eggs with 2 tablespoons of flaxseed meal mixed with 5 tablespoons of water.

Top with sliced bananas, berries, or a spoonful of Greek yogurt for extra flavor.
