Ingredients
1 cup butter, softened (2 sticks)
1½ cups granulated sugar
2 large eggs
1 teaspoon Simply Organic Pure Madagascar Vanilla Extract
2¾ cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
¼ teaspoon salt
2 to 3 tablespoons lemon zest
¼ cup cinnamon sugar (¼ cup sugar + 1 tablespoon ground cinnamon)
Instructions
1. Beat butter and sugar until fluffy and light in color.
2. Add eggs one at a time, followed by vanilla extract. Mix until smooth.
3. In a separate bowl, whisk flour, cream of tartar, baking soda, salt, and lemon zest together.
4. Gradually add the dry ingredients to the butter mixture until a soft dough forms.
5. Refrigerate the dough for at least 20 minutes to firm it slightly.
6. Preheat the oven to 400°F and line baking sheets with parchment paper.
7. Roll dough into 1-inch balls, coat with cinnamon sugar, and flatten slightly.
