Ingredients
12 ounces beef chuck coarsely ground
12 ounces beef sirloin coarsely ground
1 1/2 teaspoons paprika
3/4 teaspoon ground coriander
3/4 teaspoon ground cumin
1/2 teaspoon granulated garlic
1/2 teaspoon dried mint
1/2 teaspoon brown sugar
Pinch of ground cinnamon
1/2 cup crumbled Dodoni Feta or Mt. Vikos Feta
Kosher salt and freshly ground black pepper
Soft buns such as Arnold Country Potato Buns, Pepperidge Farm Hamburger Buns or St Pierre Brioche Style Buns
Tomato slices, lettuce leaves and thinly sliced onion for topping
Condiments and sauces for serving for example Texas Pete Original Hot Sauce Crystal Hot Sauce or Sriraja Panich Hot Sauce
Instructions
Bring a large cast iron skillet to high heat until it is very hot and evenly heated.
In a large bowl gently combine the ground beef chuck and ground beef sirloin taking care not to overwork the meat.
In a small bowl whisk together paprika ground coriander ground cumin granulated garlic dried mint brown sugar and cinnamon.
Sprinkle the spice blend over the meat then add the crumbled Dodoni Feta or Mt. Vikos Feta fold gently to distribute the cheese and spices without compressing the mixture.
Form the mixture into four patties about three quarters of an inch thick and roughly four inches across handle them lightly so they remain tender.
Season both sides of each patty generously with kosher salt and freshly ground black pepper.
Place the patties in the hot skillet and let them sear without pressing down until a deep brown crust forms then flip and cook the second side until browned and cooked to your preferred doneness.
Remove the patties from the skillet and let them rest briefly so the juices redistribute.
Toast the buns in the same skillet if desired then assemble the burgers with tomato lettuce onion and your favorite condiments and sauces such as Texas Pete Crystal or Sriraja for a bright spicy finish.
