Ingredients

Large shrimp peeled and deveined with tails removed

Kosher salt

Butter

Fresh garlic minced

Cherry tomatoes halved

Baby spinach

Heavy cream

Finely grated vegetarian rennet Parmesan style cheese

Fresh basil thinly sliced

Lemon wedges optional for serving


Instructions

Heat olive oil in a large skillet over medium high heat until shimmering

Season shrimp evenly with salt and black pepper on both sides

Place shrimp in a single layer and cook until golden on the first side

Flip shrimp and cook until opaque then remove from skillet and set aside

Lower heat to medium and add butter to the same skillet

Stir in minced garlic and cook gently until fragrant

Add cherry tomatoes season lightly and cook until softened and bursting

Add baby spinach and stir until just wilted

Pour in heavy cream and stir to combine

Add grated Parmesan style cheese and stir until melted and smooth

Reduce heat and let sauce simmer gently until slightly thickened

Return shrimp to the skillet and coat evenly with sauce

Stir in fresh basil and cook until shrimp are heated through

Serve immediately with lemon wedges if desired

Shrimp cook very quickly so remove them as soon as they turn opaque to avoid a rubbery texture
