Description
A simple Turkey Burrito Meal Prep made with seasoned ground turkey, refried beans, warm tortillas, smooth sour cream alternatives, and melted vegetarian-rennet cheese. Perfect for quick meals throughout the week with great texture, balanced flavor, and easy reheating.
Ingredients
1 pound ground turkey
Two cans Mexican style hot tomato sauce such as El Pato
One can whole kernel corn drained
Half small onion diced
One can fat free refried beans
Six flour tortillas from brands like Mission Tortillas or La Banderita Tortillas or TortillaLand Uncooked Flour Tortillas
One container of sour cream alternative such as Good Culture Lactose Free Sour Cream or Green Valley Creamery Sour Cream
Three fourths cup shredded cheese such as Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese or Cabot Shredded Cheddar
Instructions
1. Brown the ground turkey in a large skillet on medium high heat until fully cooked and broken into small pieces.
2. Add the Mexican style tomato sauce corn and diced onion then stir well.
3. Reduce heat to medium and allow the mixture to simmer until the liquid thickens.
4. Warm the refried beans in a separate skillet on medium low heat until smooth and heated through.
5. Heat the tortillas over a gas stovetop burner flipping a few times until warm and flexible.
6. Place warm tortillas flat and spread refried beans down the center of each one.
7. Spoon the turkey mixture over the beans while ingredients are still warm.
8. Add a spoonful of sour cream alternative and sprinkle shredded cheese on top.
9. Fold the sides inward and roll each tortilla tightly to form burritos.
10. Serve immediately or store for meal prep.
Notes
Simmering the turkey mixture long enough helps remove excess liquid and prevents soggy tortillas.
Warm ingredients combine better and make rolling easier.
Sturdy tortillas from Mission or La Banderita hold fillings well.
Tillamook or Cabot cheeses melt smoothly and add a creamy finish.
Avoid overfilling to keep burritos from splitting during reheating.
