Description

Soft banana cookies are rich, chewy, and frosted with creamy vanilla-infused cream cheese. The perfect way to use overripe bananas in a delicious treat!


Ingredients

Soft Banana Cookies:

1/2 cup unsalted butter, room temperature (113g)

1/2 cup packed light brown sugar (100g)

3 Tbsp granulated sugar (36g)

1 large egg, room temperature (56g)

2 Tbsp full-fat sour cream, room temperature (32g)

1 tsp vanilla extract or vanilla bean paste (4g)

1 1/2 cups all-purpose flour (190g)

1 Tbsp cornstarch (7g)

2 tsp ground cinnamon (5g)

1/2 tsp baking soda (3g)

1/2 tsp fine salt (3g)

1/2 cup mashed bananas (about 2 medium bananas, 125g)

1/3 cup mini chocolate chips or chopped chocolate (optional, 60g)

Cream Cheese Frosting:

1/2 cup cream cheese, softened (113g)

1 1/2 cups powdered sugar (190g)

2 tsp vanilla extract or vanilla bean paste (8g)

Optional Garnish:

2 Tbsp packed light brown sugar (25g)

12 banana chips


Instructions

1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment or silicone mats.

2. Cream butter, brown sugar, and granulated sugar together for 2 minutes.

3. Mix in egg, sour cream, and vanilla extract until smooth.

4. Sift flour, cornstarch, cinnamon, baking soda, and salt. Add to the wet mixture and mix until just combined.

5. Stir in mashed bananas and optional chocolate chips.

6. Use a 3-tbsp cookie scoop to portion dough onto baking sheets, spacing about 2 inches apart.

7. Bake one tray at a time for 12–13 minutes, rotating halfway through.

8. Cool cookies on the tray for 30 minutes, then transfer to a rack.

9. Beat softened cream cheese until smooth. Add powdered sugar and vanilla, mixing until thick and creamy.

10. Once cookies are fully cool, spread frosting on each cookie.

11. Garnish with brown sugar and a banana chip.

12. Store in fridge for up to a week or freeze unfrosted cookies for up to one month.

Notes

Use overripe bananas for maximum flavor.

Let cookies cool fully before frosting to prevent melting.

Store frosted cookies in an airtight container in the fridge.

Cookies can be made ahead and frozen without frosting.
