Description

Ingredients

Fresh lime juice from ripe limes plus extra wedges for serving

Red enchilada sauce such as Siete Red Enchilada Sauce

Taco seasoning blend with chili powder cumin paprika and oregano

Vegetable oil or olive oil

Garlic powder

Medium shrimp peeled and deveined

Freshly ground black pepper

Fresh cilantro finely chopped for garnish


Instructions

1. Combine lime juice enchilada sauce taco seasoning oil and garlic powder in a large bowl and whisk until smooth

2. Season the mixture lightly with black pepper

3. Add the shrimp to the bowl and toss until every piece is evenly coated

4. Allow the shrimp to rest in the marinade briefly to absorb flavor

5. Preheat the grill to medium high heat and lightly oil the grates

6. Thread the shrimp onto skewers placing them close together without crowding

7. Grill the shrimp until pink lightly charred and cooked through turning once

8. Remove from the grill and transfer to a serving plate

9. Finish with fresh lime juice and chopped cilantro before serving

Notes

Use medium or large shrimp for best texture and juiciness

Avoid marinating shrimp too long since citrus can change the texture

Metal skewers help cook shrimp evenly from the inside
