Ingredients

1/2 cup (100 g) granulated sugar

1/3 cup (80 ml) canola oil
2 3/4 to 3 cups (345–375 g) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
Red gel food coloring
Blue gel food coloring
1/2 teaspoon cherry flavor extract
1/2 teaspoon raspberry flavor extract
1/2 teaspoon lemon flavor extract
Optional: 1/4 teaspoon alcohol-free vanilla flavor (Simply Organic or Watkins Clear Vanilla)
Instructions
Cream softened butter, powdered sugar, and granulated sugar in a large bowl until light and fluffy
Add egg and canola oil, then mix until smooth and fully combined
Whisk flour, baking soda, cream of tartar, and salt in a separate bowl
Gradually mix dry ingredients into wet mixture until a soft dough forms
Divide dough into three equal portions
Mix red coloring and cherry extract into one portion until evenly colored
Mix blue coloring and raspberry extract into another portion
Add lemon extract to the third plain portion
Shape each portion into logs about 10 inches long
Place logs side by side and gently press together to form a single block
Wrap dough in plastic wrap and refrigerate for 30 minutes
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper
Slice chilled dough into 1/4-inch thick rounds
Place cookies 1 inch apart on baking sheets
Lightly press each cookie with a fork to create ridges
Bake for 10–12 minutes until set but not browned
Cool on baking sheet briefly, then transfer to a wire rack to cool completely
