Ingredients

Basmati rice, rinsed until water runs clear

Medium shrimp, peeled and cleaned

Frozen corn kernels, rinsed and drained

Scallions, whites and greens separated

Red bell pepper, chopped

Garlic cloves, mostly chopped with one finely minced

Fresh ginger, thinly sliced

White miso paste

Ground turmeric powder

Kosher salt

Granulated sugar, optional

Ground cayenne pepper, optional

Extra virgin olive oil

Freshly ground black pepper

Water

Fresh lime wedges for serving


Instructions

1. Rinse the basmati rice thoroughly and soak it in water while preparing the remaining ingredients

2. Warm olive oil in an oven safe skillet and gently cook chopped garlic and sliced ginger until fragrant

3. Add scallion whites, red bell pepper, miso paste, turmeric, salt, optional sugar, and cayenne to a blender and blend until smooth while slowly adding olive oil

4. Pat the shrimp dry and season with minced garlic, turmeric, salt, and black pepper

5. Heat olive oil in the skillet and cook the shrimp until just opaque, then remove and keep covered

6. Add the blended vegetable paste to the skillet and cook while stirring until thickened and aromatic

7. Whisk in water until smooth, then add drained rice and corn along with any shrimp juices

8. Bring the mixture to a gentle simmer, cover tightly, and bake until rice is tender and liquid is absorbed

9. Fluff the rice gently, top with shrimp, garnish with scallion greens, and serve with lime wedges

Notes

Rinsing the rice is essential for light and fluffy texture

White miso adds savory depth, so adjust added salt carefully
