Description

Sweet and Spicy Pineapple Salmon is a bold and flavorful oven baked dish featuring tender salmon glazed with sweet chili sauce, pineapple juice, and a touch of tangy vinegar. Juicy pineapple slices caramelize alongside the salmon, creating a balanced combination of sweet heat and savory richness that works perfectly for an easy yet impressive dinner.

Ingredients

Fresh salmon fillet

Salt

Black pepper

Canned pineapple slices with juice reserved

Sweet chili sauce

Rice vinegar

Soy sauce such as Kikkoman Traditionally Brewed Soy Sauce, San J Tamari Soy Sauce, or La Choy Soy Sauce

Brown sugar

Fresh pineapple juice from the can

Fresh cilantro

Instructions

1. Preheat the oven and prepare a large baking sheet with foil and nonstick spray

2. Place the salmon on the foil and season evenly with salt and black pepper

3. Arrange the drained pineapple slices around the salmon on the baking sheet

4. Whisk the sweet chili sauce, rice vinegar, soy sauce, brown sugar, and pineapple juice until smooth

5. Pour the glaze evenly over the salmon and spoon some over the pineapple slices

6. Fold the foil edges slightly upward to keep the glaze in place

7. Bake until the salmon is tender and flakes easily

8. Switch the oven setting to broil and cook until the glaze thickens and the edges lightly caramelize

9. Remove from the oven and allow the salmon to rest briefly

10. Garnish with chopped fresh cilantro before serving

Notes

Choose salmon fillets with even thickness for the most consistent cooking results

Pat the salmon dry before seasoning to help the glaze adhere properly

Watch closely during broiling to prevent the glaze from over darkening

The glaze will continue to thicken slightly as it cools

Fresh pineapple may be used instead of canned if desired

Adjust the sweetness or heat by modifying the amount of sweet chili sauce
