Brown sugar
Fresh pineapple juice from the can
Fresh cilantro
Instructions
1. Preheat the oven and prepare a large baking sheet with foil and nonstick spray
2. Place the salmon on the foil and season evenly with salt and black pepper
3. Arrange the drained pineapple slices around the salmon on the baking sheet
4. Whisk the sweet chili sauce, rice vinegar, soy sauce, brown sugar, and pineapple juice until smooth
5. Pour the glaze evenly over the salmon and spoon some over the pineapple slices
6. Fold the foil edges slightly upward to keep the glaze in place
7. Bake until the salmon is tender and flakes easily
8. Switch the oven setting to broil and cook until the glaze thickens and the edges lightly caramelize
9. Remove from the oven and allow the salmon to rest briefly
10. Garnish with chopped fresh cilantro before serving
