Description

A refreshing and naturally sweet frozen dessert made with fresh strawberries, monk fruit, lemon juice, and water. This sugar free strawberry sorbet is light, smooth, and bursting with flavor.

Ingredients

1 lb strawberries, hulled and halved

1 tsp lemon juice

1/4 cup water

2 tsp monk fruit sweetener

Instructions

1. Hull and slice one pound of strawberries, then freeze them until solid.

2. Add the frozen strawberries to a blender or food processor and pulse for about one minute until coarse.

3. Add the lemon juice, water, and monk fruit sweetener, then blend until smooth and creamy.

4. Transfer the mixture to a freezer-safe container and freeze for 1.5 hours.

5. Remove from the freezer, stir to break up ice crystals, then return to the freezer until firm.

6. Let sit at room temperature for 5 minutes before scooping and serving.

Notes

Use ripe, fresh strawberries for the best flavor.

If your blender struggles with frozen fruit, let the strawberries thaw slightly before blending.

Avoid over-blending to keep the mixture cold and smooth.

Stir the sorbet midway through freezing to prevent large ice crystals.

Store in an airtight container with parchment pressed on top to avoid frost buildup.
