Description

A creamy and refreshing Sugar Free & Low Carb Mint Chocolate Chip Ice Cream made with Fairlife milk, heavy cream, and natural sweeteners. Perfectly minty, smooth, and guilt-free for a low-carb or keto lifestyle.


Ingredients

3/4 cup Fairlife whole milk

1.5 cups heavy cream

2/3 cup Swerve sweetener

Pinch of salt

3/4 teaspoon Simply Organic Pure Madagascar Vanilla Extract

3/4 teaspoon Frontier Co-op Peppermint Flavoring

3/4 tablespoon Now Foods Beef Gelatin or Custom Collagen Unflavored Gelatin

3/4 cup chopped Lily’s or ChocZero sugar-free mini chocolate chips

Optional: a few drops of natural green food coloring

Optional: 3/4 tablespoon vegetable glycerin


Instructions

1. Sprinkle gelatin over 1/4 cup of the Fairlife milk and let sit for a few minutes to bloom.

2. In a large bowl, mix the remaining milk, heavy cream, sweetener, salt, vanilla, and peppermint flavoring until well combined.

3. Add the gelatin mixture to the bowl and stir until completely dissolved.

4. Add a few drops of natural green food coloring if desired and stir to achieve your preferred shade.

5. Pour the mixture into your ice cream maker and churn according to manufacturer instructions until it reaches soft-serve consistency.

6. Add the chopped sugar-free chocolate chips and mix evenly into the ice cream.

7. Transfer to a freezer-safe container and freeze for 30–60 minutes for a firmer texture.

8. If too firm when serving, let it sit at room temperature for 5–10 minutes before scooping.

Notes

For extra smooth texture, use vegetable glycerin or an additional tablespoon of heavy cream.

Make sure ingredients are well chilled before churning to prevent ice crystals.

Store in an airtight container with a layer of parchment paper pressed on top to prevent freezer burn.

Best enjoyed within two weeks for optimal flavor and texture.
