Ingredients
For the Crust:
2 cups unsweetened shredded coconut
1/2 cup raw sunflower seeds
1/4 teaspoon salt
1/4 cup Swerve sweetener
1/2 cup butter, softened
For the Filling:
3 limes or 1/2 cup fresh lime juice
1.5 teaspoons agar-agar powder
2 ripe avocados
4 ounces cream cheese, room temperature
1/4 cup plain Greek yogurt
1 cup heavy cream
Zest of 1 lime
1/2 teaspoon pure stevia extract
1/2 teaspoon lemon liquid stevia
1/2 teaspoon non-alcoholic pure vanilla extract
Optional Topping:
2 cups whipped cream
Lime zest or thin lime slices for garnish
Instructions
1. Add all crust ingredients into a food processor and process until combined into a sticky, crumbly mixture.
2. Press the mixture evenly into a greased 9×13-inch baking dish to form a compact base. Set aside.
3. In a small saucepan, combine lime juice and agar-agar powder. Bring to a gentle boil, then reduce heat and stir until dissolved. Cool for 2 minutes.
4. In a stand mixer, beat avocados and cream cheese until smooth and creamy.
5. Add Greek yogurt, heavy cream, lime zest, stevia extracts, and vanilla. Beat until fully incorporated.
6. Pour in the cooled lime-agar mixture and mix on high until fluffy and combined.
7. Spread the filling evenly over the crust and refrigerate uncovered for 2 to 3 hours until set.
8. Top with whipped cream and garnish with lime zest or slices before serving.
9. Slice into 18 bars and keep refrigerated until ready to serve.
