Ingredients

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground ginger (unsweetened)

1 teaspoon ground cinnamon (unsweetened)

1 teaspoon allspice

1/2 teaspoon ground cloves

1/2 teaspoon salt

1 1/2 sticks unsalted butter, softened at room temperature

1/2 cup brown sugar alternative

1 large egg

1 cup molasses substitute (such as yacon syrup or monk fruit syrup)

Extra flour for dusting as needed


Instructions

1. Sift together flour, baking soda, ground ginger, cinnamon, allspice, and cloves in a medium bowl. Set aside.

2. In another bowl, cream butter and brown sugar alternative using an electric mixer until light and fluffy.

3. Add egg and molasses substitute, mixing until smooth.

4. Gradually add the dry ingredients to the wet mixture, one quarter at a time, mixing between additions until fully combined.

5. Divide dough in half, shape each into a disc, wrap in plastic, and refrigerate for at least 3 hours.

6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

7. Roll out one portion of dough at a time between plastic wrap to 1/4 inch thickness. If sticky, sprinkle lightly with flour.

8. Cut dough into shapes using cookie cutters and place cookies 1 inch apart on baking sheet.

9. Chill cookies for 10 minutes before baking to maintain shape.

10. Bake 10–12 minutes, until edges are lightly golden and centers are set.

11. Cool cookies on tray for 5 minutes, then transfer to a wire rack to cool completely before decorating or storing.

Use a brown sugar alternative that measures cup-for-cup like sugar for best results.
