Description

Sugar Free Funfetti Cupcakes are soft vanilla cupcakes filled with colorful sugar free sprinkles and topped with a creamy smooth frosting. They deliver classic bakery flavor with a lighter approach, making them perfect for anyone who wants a fun dessert without traditional sugar. These cupcakes bake up fluffy, moist, and beautifully balanced, with a nostalgic taste that feels indulgent and satisfying.

Ingredients

1½ cups all purpose flour

1¼ teaspoons baking powder

¾ cup granulated sugar alternative suitable for baking

½ cup neutral oil such as avocado or light olive oil

2 large eggs at room temperature

⅔ cup milk, dairy or unsweetened almond milk

1½ teaspoons vanilla flavor such as Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor

½ cup sugar free rainbow sprinkles

Frosting

½ cup unsalted butter, softened

2½ cups sugar free powdered sweetener

½ teaspoon vanilla flavor using Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor

¼ cup sugar free sprinkles or as desired

Instructions

Preheat the oven to 350 degrees and line a cupcake pan with paper liners, then set aside

Whisk the flour and baking powder together in a medium bowl until evenly combined

In a large mixing bowl, beat the sugar alternative and oil until smooth and glossy

Add the eggs one at a time, mixing well and scraping down the sides of the bowl as needed

Mix in the milk and vanilla flavor until fully incorporated

Gradually add the dry ingredients and mix gently until just combined, avoiding overmixing

Fold the sugar free sprinkles into the batter using a rubber spatula

Fill each cupcake liner about two thirds full with batter

Bake in the center of the oven until a toothpick inserted in the center comes out clean

Allow the cupcakes to cool briefly in the pan, then transfer to a wire rack to cool completely

Beat the butter until creamy, then gradually mix in the powdered sweetener and vanilla flavor

Whip the frosting until light and fluffy, adjusting texture if needed

Frost the cooled cupcakes and finish with additional sprinkles

Notes

Use room temperature eggs and milk for a smoother batter and better texture

Choose a sugar alternative designed for baking to ensure proper structure and sweetness

Avoid overmixing the batter to keep the cupcakes light and fluffy

Use baking friendly sprinkles to prevent color bleeding or melting

Allow cupcakes to cool fully before frosting to maintain a smooth finish

Store unfrosted cupcakes in an airtight container at room temperature for up to two days

Frosted cupcakes can be refrigerated for several days and brought to room temperature before serving
