These Sugar Free Chocolate Swirl Cheesecake Bites are creamy, rich, and perfectly portioned. They combine an almond flour crust with a smooth chocolate cheesecake filling, sweetened without sugar for a guilt-free indulgence.
Ingredients
Crust:
1 cup fine almond flour, sifted
3 tablespoons butter, melted
3 tablespoons sugar substitute (such as Swerve or Monkfruit)
3 tablespoons cocoa powder
Filling:
4 ounces sugar-free dark chocolate bar (such as ChocZero or Lily’s)
16 ounces (2 packages) cream cheese, softened
2/3 cup sour cream
3/4 cup granulated sugar substitute (1/2 cup Swerve + 1/4 cup Monkfruit)
2 tablespoons dark cocoa powder
2 large eggs + 2 egg yolks, room temperature
1/2 cup heavy cream
1 teaspoon Simply Organic Pure Madagascar Vanilla Extract (alcohol-free)
Topping:
2 ounces melted sugar-free dark chocolate or sugar-free chocolate syrup
Instructions
1. Preheat oven to 325°F. Line 24 muffin cups with paper liners and lightly spray with non-stick baking spray.
2. Melt butter and combine with almond flour, cocoa powder, and sugar substitute to make the crust mixture.
3. Press about 1 tablespoon of crust mixture into each muffin cup and bake for 5 minutes. Reduce oven temperature to 300°F.
4. Melt sugar-free chocolate in a microwave or double boiler, stirring until smooth. Let it cool slightly.
5. In a food processor or mixer, blend softened cream cheese and sugar substitute for about 3 minutes until smooth.
6. Add sour cream and cocoa powder, then mix until fully combined.
7. Add eggs and egg yolks, then pour in heavy cream and mix gently.
8. Fold in the melted chocolate and vanilla extract by hand until evenly blended.
9. Divide batter evenly into muffin cups, filling about two-thirds full.
10. Bake cheesecakes for 15 minutes, then turn off the oven and leave them inside for 10 minutes with the door closed.
11. Remove and cool completely on a rack before adding topping.
12. For the topping, melt chocolate or use sugar-free chocolate syrup. Spoon about 1/2 tablespoon over each cheesecake.
13. Refrigerate until the chocolate sets and cheesecakes are firm.
14. Serve chilled and enjoy.

You can substitute sour cream with plain Greek yogurt for a slightly tangier taste.
