Description

These sugar free chocolate lava cakes (mini size) are gooey, rich, and low in carbs. Made with simple ingredients like almond flour and monk fruit sweetener, they’re perfect for a quick and indulgent dessert without added sugar.


Ingredients

2 eggs

1 teaspoon alcohol-free vanilla flavor

2 ounces sugar free chocolate chips or 85% dark chocolate (or unsweetened chocolate with extra sweetener)

2 ounces salted butter (plus extra for greasing ramekins)

1 teaspoon instant coffee granules

1 tablespoon almond flour or sunflower seed meal

2 tablespoons Monk Fruit Allulose Confectioners


Instructions

1. Preheat oven to 350°F, fan forced.

2. Using a stand mixer or handheld electric mixer, beat the eggs and vanilla flavor until thick and creamy.

3. In a microwave-safe bowl, melt the chocolate, butter, and coffee granules in short bursts until smooth.

4. Add the chocolate mixture to the eggs, mixing on low until combined.

5. Fold in almond flour (or sunflower seed meal) and sweetener until fully incorporated.

6. Grease two 1-cup ramekins thoroughly with butter.

7. Divide the batter evenly between ramekins.

8. Bake for 10–15 minutes, until the top is set but the center is still soft.

9. Let rest for 5 minutes before inverting onto serving plates.

10. Serve immediately with sugar free whipped cream, fresh berries, or low carb ice cream if desired.

Notes

These cakes are best enjoyed fresh. Storing them in the fridge may cause the lava center to set.
