Description

Chewy, buttery, and perfectly sweet Sugar Free Chocolate Chip Blondies made with brown sugar alternative, Splenda, and sugar free chocolate chips. A simple, rich dessert that’s low in sugar but full of flavor.


Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

17 tablespoons unsalted butter, softened

¾ cup brown sugar alternative

¾ cup Splenda or sucralose-based sweetener

2 teaspoons Simply Organic Pure Madagascar Vanilla Extract

2 large eggs

8 ounces sugar free chocolate chips

Optional: ½ cup chopped walnuts or pecans for added crunch


Instructions

1. Preheat oven to 325°F. Lightly grease or line a baking pan with parchment paper for non-stick baking.

2. In a medium bowl, whisk together flour and baking soda. Set aside.

3. In a separate large bowl, cream the butter, brown sugar alternative, and Splenda until light and fluffy.

4. Lower mixer speed and add vanilla extract and eggs one at a time, mixing until smooth.

5. Gradually add the flour mixture to the wet ingredients until combined.

6. Fold in sugar free chocolate chips (and optional nuts) gently by hand.

7. Spread batter evenly in the prepared pan and smooth the top.

8. Bake for 25–30 minutes until lightly golden around the edges and a toothpick inserted in the center comes out mostly clean.

9. Cool completely before cutting into squares for perfect texture.

Notes

For the best chewy texture, avoid overmixing the batter once the flour is added.

Let the blondies cool before slicing to allow them to set properly.

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.

These blondies can also be frozen for up to 1 month. Reheat in the microwave for 10–15 seconds before serving.

Use heat-stable sugar substitutes like Splenda, Monk Fruit, or Erythritol blends for the best baking results.
