Ingredients
Crust:
3/4 cup almond flour
1 1/2 tablespoons stevia
1/2 teaspoon cinnamon
1/4 cup unsalted butter, melted
Filling:
16 oz Philadelphia Original Cream Cheese (softened)
1/2 cup sugar substitute (erythritol, monk fruit, or allulose)
1 teaspoon Simply Organic Pure Madagascar Vanilla Extract
1/2 teaspoon lemon extract
2 teaspoons raspberry extract
1/4 teaspoon xanthan gum
Topping:
1/2 pint fresh raspberries
Fresh mint leaves
Lemon wedges (optional)
Instructions
1. In a small bowl, combine almond flour, stevia, and cinnamon.
2. Add melted butter and mix until the texture resembles damp sand.
3. Spoon the crust mixture evenly into twelve small dessert cups and press lightly to form a base.
4. Refrigerate while preparing the filling.
5. In a large bowl, beat softened cream cheese with sugar substitute until smooth and creamy.
6. Add vanilla, lemon, and raspberry extracts along with xanthan gum.
7. Continue mixing until the filling becomes thick and fluffy.
8. Transfer the cheesecake mixture into a pastry bag or zip-top bag with a corner cut off.
9. Pipe the mixture evenly over the prepared crust in each dessert cup.
10. Top with fresh raspberries, mint leaves, and a lemon wedge for garnish.
11. Refrigerate for at least one hour before serving for best texture.
Notes
Use only alcohol-free vanilla extract such as Simply Organic Pure Madagascar Vanilla Extract.
Ensure the butter is unsalted for better flavor balance.
If desired, substitute almond flour with ground pecans or hazelnuts for a richer crust.
For an extra creamy texture, fold in a few tablespoons of whipped cream or coconut cream into the filling.
