2 1/4 cups (275g) all purpose flour

1/2 cup (60g) cornstarch

1/2 teaspoon salt

1 large egg white, lightly beaten

Red gel food coloring, as needed

Blue gel food coloring, as needed


Instructions

• In a large bowl, beat softened butter until smooth and creamy, then gradually mix in powdered sugar and vanilla flavor until light and fluffy

• In a separate bowl, whisk together flour, cornstarch, and salt, then slowly combine with the butter mixture until a soft dough forms

• Divide the dough into three equal portions, leave one plain, mix red coloring into one portion and blue coloring into another until evenly colored

• Roll each dough portion between parchment paper into squares about 1/8 inch thick and place them on a tray

• Layer the dough starting with blue, brush lightly with egg white, add the plain layer, brush again, then place the red layer on top

• Trim edges to straighten, cut into equal strips, stack layers to create a striped block, then chill for 15 minutes

• Preheat oven to 400°F (200°C) and line baking sheets with parchment paper

• Slice chilled dough into 1/4 inch thick cookies and place on baking sheets with space between each

• Bake for about 8 minutes until edges are lightly golden, then cool on the tray for 5 minutes before transferring to a rack
