Description
A bold and flavorful Spicy Shrimp Lunch Meal Prep made with tender shrimp, fluffy jasmine rice, fresh vegetables, and a creamy roasted jalapeno slaw. This meal is quick to assemble, full of vibrant texture, and perfect for convenient weekday lunches.
Ingredients
15 shrimp
1/2 cup shredded carrots
1/2 cup black beans, rinsed and drained
1/2 cup tomatoes
1 cup jasmine rice
1 tsp chili powder
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp dried oregano
1/4 tsp sea salt
dash of black pepper
2 tbsp avocado oil
12 oz slaw mix
1 roasted jalapeno
1/2 cup cilantro
2 garlic cloves, minced
1 lime, juiced
1/3 cup plain Greek yogurt
1/4 tsp sea salt
Instructions
1. Prepare the jasmine rice until fluffy.
2. Defrost shrimp if needed and pat dry.
3. Mix chili powder, smoked paprika, garlic powder, cumin, dried oregano, sea salt, and black pepper.
4. Heat avocado oil in a nonstick pan.
5. Add shrimp and coat with seasonings, cooking until pink on both sides.
6. Roast the jalapeno over a flame or in the oven.
7. Blend roasted jalapeno, Greek yogurt, cilantro, garlic, lime juice, and sea salt to make the crema.
8. Toss slaw mix with the jalapeno crema.
9. Assemble bowls with rice, carrots, tomatoes, black beans, shrimp, and slaw.
10. Top with extra crema and serve.
Notes
Trader Joe’s frozen Argentinian shrimp works well.
Reserve extra jalapeno crema for topping.
