A quick, flavorful, and nutritious breakfast made with creamy avocado, smoked salmon, lime, and rye toast. Perfect for a protein-packed start to your day.
Ingredients
200 g Scottish smoked salmon
Salt and freshly ground black pepper
15 g unsalted butter
1 small red chili, chopped
1 small handful of fresh coriander leaves, chopped (reserve some for garnish)
4 slices rye bread (Trader Joe’s Sprouted Rye Bread)
1 lime, juiced
2 ripe avocados
Instructions
1. Cut, pit, and scoop the avocados into a bowl.
2. Season with salt, pepper, lime juice, coriander, and chili.
3. Mash together until smooth but slightly chunky.
4. Toast the rye bread and spread each slice with butter.
5. Divide the avocado mixture over the toast and top each with smoked salmon.
6. Garnish with the reserved coriander leaves and serve immediately.
Notes
Use ripe avocados for best texture—they should yield slightly to pressure.
For added flavor, drizzle olive oil or sprinkle chili flakes on top.
Replace coriander with dill or parsley for a milder flavor.
Prepare the avocado mixture just before serving to maintain freshness.
