Ingredients
4 boneless skinless chicken breasts
1 can diced tomatoes with juices
1 cup Kalamata olives pitted and halved
1 cup sliced red onion
4 cloves garlic minced
1 tsp dried oregano
1 tsp dried basil
1 tsp red pepper flakes optional
Salt and pepper to taste
Fresh parsley for garnish
Cooked couscous or quinoa for serving
Instructions
1. Season chicken with salt, pepper, oregano, basil, and red pepper flakes then place in slow cooker
2. Top with diced tomatoes olives red onion and garlic
3. Cover and cook on low until chicken is tender or cook on high for a faster option
4. Serve chicken with tomato olive sauce over couscous or quinoa and garnish with parsley

You can sear the chicken briefly before slow cooking to deepen the flavor
