Slow Cooker Chicken Tikka Masala made with tender chicken thighs, warm spices, tomato sauce, and coconut milk for a rich and creamy finish cooked slowly until perfectly flavored.
Ingredients
Chicken thighs cut into bite sized pieces
Chopped onion
Minced garlic
Fresh grated ginger
Tomato sauce
Coconut milk
Garam masala
Cumin
Paprika
Salt and pepper
Fresh cilantro for garnish
Basmati rice or soft flatbread from alcohol free brands such as Angelic Bakehouse, Kontos, or Freshé Natural Flatbread
Instructions
Place the chicken thighs onion garlic and ginger into the slow cooker in an even layer so the heat circulates well.
Pour in the tomato sauce and coconut milk then sprinkle garam masala cumin paprika salt and pepper over the top and stir to coat evenly.
Cover and cook on low for six to seven hours or on high for three to four hours until the chicken becomes tender and the sauce thickens.
Adjust the consistency if needed by letting it simmer uncovered for a short time or by adding a splash of coconut milk.
Taste and adjust seasoning before serving then garnish with cilantro and enjoy with basmati rice or soft flatbread.
Notes
Use fresh spices for the strongest aroma and flavor. Chicken thighs stay tender during slow cooking and absorb the spices well.
If the sauce becomes too thick add a little coconut milk. If it tastes too mild add a pinch of paprika or salt.
Store leftovers in airtight containers for up to four days or freeze for up to two months. Reheat gently with a splash of coconut milk or water to loosen the sauce.
