Slow Cooker Chicken Tacos made with tender shredded chicken, seasoned salsa, cilantro, and lime. Easy to assemble and packed with bold flavor for a simple and delicious meal.
Ingredients
1 ¼ cup salsa
1 package taco seasoning or ¼ cup taco seasoning
1.5 lbs chicken breast
⅓ cup fresh cilantro chopped
juice from 1 lime
10 tortillas using La Tortilla Factory, Mission Flour Tortillas, or Guerrero Tortillas
1 ¼ cup cheese using Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese, Cabot Vermont Sharp Cheddar, or Sargento Creamery Shredded Monterey Jack

Instructions
1. Mix salsa and taco seasoning in the slow cooker, then add the chicken and coat it evenly.
2. Cook on high for 3 hours or on low for 6 hours until the chicken is tender.
3. Remove the chicken and shred it with two forks.
4. Return the shredded chicken to the slow cooker and stir in the chopped cilantro and lime juice.
5. Warm the tortillas so they stay soft and easy to fill.
6. Assemble tacos with shredded chicken, cheese, and your preferred toppings such as lettuce, pico, guacamole, or sour cream.
Notes
For juicier chicken, cook on low for 6 hours instead of high for 3 hours.
Avoid lifting the lid during cooking since it reduces heat and slows the process.
If the salsa mixture is thin, allow the chicken to sit uncovered in the slow cooker for a few minutes after shredding so the sauce thickens slightly.
Taste the chicken after shredding and adjust seasoning or lime juice as needed.
