Description
A warm and comforting Slow Cooker Chicken Cacciatore made with tender chicken thighs, tomatoes, garlic, oregano, basil, peppers, and a splash of chicken broth. It cooks slowly into a rich sauce that pairs beautifully with pasta or polenta.
Ingredients
4 boneless skinless chicken thighs
1 can diced tomatoes
1 bell pepper sliced
1 onion sliced
3 cloves garlic minced
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
A splash of chicken broth
Fresh parsley for garnish
Cooked pasta or polenta for serving
Instructions
1. Place the chicken thighs inside the slow cooker and spread them evenly.
2. Add the diced tomatoes bell pepper onion garlic oregano basil salt pepper and a splash of chicken broth.
3. Stir lightly to combine everything without disrupting the chicken layer.
4. Cover and cook on low for six to seven hours or on high for three to four hours until the chicken becomes tender.
5. Serve the chicken and sauce over warm pasta or creamy polenta and finish with fresh parsley on top.
Notes
Chicken thighs remain tender during slow cooking and absorb flavor well.
Tomatoes naturally create their own broth so additional liquid is rarely needed.
Add more seasoning near the end if the flavors need adjustment.
The sauce pairs well with pasta polenta rice or soft alcohol free breads.
Leftovers store well in the refrigerator for up to three days and freeze for up to three months.
