Ingredients
5 slices uncured turkey bacon, chopped
1 large avocado, peeled and pitted
1/3 cup plain Greek yogurt such as Fage BestSelf Plain or Siggi’s Plain Yogurt
1 tbsp fresh lemon juice
1/8 tsp salt
1/4 tsp ground black pepper
8 large romaine lettuce leaves
2 1/3 cups chopped skinless rotisserie chicken breast
1/2 cup halved cherry tomatoes
2 green onions, thinly sliced
Instructions
1. Cook chopped turkey bacon in a skillet over medium heat until crisp then transfer to a paper towel lined plate
2. Mash avocado with yogurt lemon juice salt and pepper until creamy and smooth
3. Spread the avocado mixture onto each romaine lettuce leaf
4. Top with chopped chicken halved cherry tomatoes sliced green onions and crisp turkey bacon
5. Serve immediately while the lettuce is crisp and the toppings are fresh
Notes
For the avocado mixture press parchment onto its surface before refrigerating to slow browning
Keep ingredients stored separately until ready to assemble to maintain crisp texture
Pat tomatoes dry before adding them to prevent moisture from softening the lettuce
Reheat turkey bacon briefly in a skillet if made ahead to restore its crispness
