Ingredients
Extra virgin olive oil
Yellow onion, finely chopped
Fresh fennel bulb, chopped, plus fronds for garnish
Green bell pepper, cored and chopped
Garlic cloves, minced
Kosher salt

Tomato paste
Cajun seasoning
Yukon Gold or red potatoes, quartered
Chicken stock
Crushed tomatoes
Large shrimp, peeled and deveined
Fresh lemon juice
Instructions
1. Heat olive oil in a large pot or Dutch oven over medium heat
2. Add onion, fennel, bell pepper, and garlic and season lightly with salt and black pepper
3. Cook while stirring often until vegetables are soft and fragrant
4. Stir in tomato paste and cook until slightly darkened and aromatic
5. Add Cajun seasoning and mix well to coat the vegetables
6. Add potatoes and pour in chicken stock then bring to a gentle boil
7. Reduce heat, cover, and simmer until potatoes are tender
8. Stir in crushed tomatoes and gently add shrimp
9. Season lightly and cover until shrimp are just cooked through
10. Remove from heat and stir in fresh lemon juice
11. Taste and adjust seasoning before serving
12. Garnish with chopped fennel fronds
