Garlic cloves, finely chopped
Cajun seasoning without added salt
Kosher salt
Freshly ground black pepper
Low sodium chicken broth
Fire roasted diced tomatoes
Bay leaf
Medium shrimp, peeled and deveined
Scallions, sliced
Cooked white rice for serving
Instructions
Melt the butter in a large heavy bottomed skillet or Dutch oven over medium low heat and gradually stir in the flour, stirring constantly until the mixture turns a deep caramel color with a nutty aroma
Add the chopped onion, green bell pepper, and celery to the roux and cook while stirring until the vegetables soften and become fragrant
Stir in the sliced beef sausage, garlic, and Cajun seasoning, then season lightly with salt and black pepper and cook briefly until the garlic releases its aroma
Slowly pour in the chicken broth while stirring to create a smooth base, then add the fire roasted tomatoes and bay leaf and bring the mixture to a gentle boil
Reduce the heat and allow the gumbo to simmer slowly, stirring occasionally, until thickened and deeply flavored
Add the shrimp near the end of cooking and simmer gently until the shrimp turn pink and are cooked through
Taste and adjust seasoning as needed, then stir in most of the scallions
Serve the gumbo hot over cooked white rice and garnish with the remaining scallions
Notes
The roux is the foundation of this gumbo and should be cooked slowly with constant stirring to avoid burning
Shrimp should only be added near the end of cooking to keep them tender and juicy
