Ingredients

Fettuccine pasta

Kosher salt

Raw shrimp peeled and deveined

All purpose flour

Heavy cream

Whole milk

Large egg yolk

Finely grated Parmesan style cheese made with vegetarian rennet such as Cabot Creamery or Tillamook

Fresh parsley finely chopped


Instructions

1. Bring a large pot of water to a boil and season generously with salt then cook the fettuccine until al dente and reserve some pasta water before draining

2. Heat butter in a wide skillet and cook the shrimp until pink and opaque then remove and keep warm

3. Melt remaining butter in the same skillet and gently cook the garlic until fragrant

4. Whisk in flour and cook briefly to remove raw taste while keeping the mixture smooth

5. Slowly add cream and milk while whisking then blend in the egg yolk until fully incorporated

6. Simmer gently and add grated cheese stirring until melted and creamy

7. Return pasta and shrimp to the skillet and toss to coat evenly adding pasta water as needed for a silky sauce

8. Season with salt and pepper then garnish with parsley and extra cheese before serving
