Instructions
1. Cook the sushi rice according to package directions.
2. Warm sesame oil in a pan and cook the onion until soft.
3. Add the chicken mince and break it apart while cooking until lightly browned.
4. Blanch the green beans with hot water to keep them crisp.
5. Whisk tamari honey sesame oil white vinegar garlic and ketchup then pour into the browned chicken.
6. Add spring onion and sesame seeds then simmer until the mixture becomes glossy and sticky.
7. Divide the cooked rice into bowls or containers and spoon the chicken mixture on top.
8. Warm the green beans and edamame with tamari and honey then add to each rice bowl.
9. Finish with sesame seeds and a drizzle of mayo or spicy mayo mixture.
Notes
The sauce should taste slightly strong before reducing since it mellows as it cooks with the chicken.
Keep vegetables crisp to maintain texture throughout storage.
If the chicken mixture thickens too much add a small splash of water to loosen it.
This rice box stays fresh for up to four days in the fridge when stored in airtight containers.
