Savory Oatmeal with Spinach & Egg is a warm, hearty breakfast that combines creamy oats, baby spinach, and a perfectly soft-boiled egg for a nutritious and flavorful meal.
Ingredients
1 small shallot, minced (about ½ cup)
½ cup (40 grams) old-fashioned oats
1½ cups (350 ml) vegetable or chicken broth
1 tablespoon (15 ml) low-sodium soy sauce
1 generous cup baby spinach leaves
1 tablespoon (14 grams) butter or olive oil
1 tablespoon (15 grams) white miso paste
1 soft-boiled egg (7-minute egg)
A drizzle of Texas Pete® Original Hot Sauce or Crystal® Hot Sauce, optional
Instructions
1. Combine shallot, oats, broth, soy sauce, and spinach in a small pot.
2. Bring to a boil over high heat.
3. Reduce heat to simmer and cook for about 5 minutes, stirring occasionally until oats have softened into a porridge.
4. Remove from heat and stir in butter and miso paste.
5. Transfer to a bowl and top with a drizzle of hot sauce and a soft-boiled egg.
6. Serve warm and enjoy immediately.
Notes
Old-fashioned rolled oats make a more robust and satisfying oatmeal.
Use Imagine No Chicken Lower Sodium Broth or chicken broth for depth of flavor.
To make it gluten-free, use certified gluten-free oats, soy sauce, and miso.
You can add roasted broccolini, sautéed zucchini, or mushrooms for extra flavor.
For added creaminess, stir in a little olive oil or sprinkle Tillamook or Cabot cheddar on top.
Best enjoyed freshly made but can be refrigerated for up to one week and reheated with broth.
