Ingredients
½ cup rolled oats
1 cup water
Pinch of coarse salt and freshly ground pepper
1 egg
½ cup shredded Tillamook Sharp Cheddar or Cabot Creamery Sharp Cheddar
1 tablespoon sliced scallions (optional)
Instructions
1. Boil 1 cup of water in a small saucepan. Add oats and a pinch of salt. Simmer over low heat for about 5 minutes, stirring occasionally until tender.
2. Stir in ¼ cup of the shredded Cheddar cheese until melted and creamy. Season with black pepper to taste.
3. While the oats cook, prepare your egg. You can poach, soft-boil, or fry it — aim for a runny yolk for extra creaminess.
4. Spoon the cheesy oatmeal into a serving bowl. Top with the remaining shredded cheese.
5. Place the cooked egg on top and garnish with sliced scallions or chives if desired.
6. Serve warm and enjoy immediately.
Notes
Rolled oats provide the best creamy texture but instant or steel-cut oats also work — just adjust cooking time per package instructions.
