Ingredients

Instructions
1. Preheat the oven to four hundred twenty five degrees and line a baking sheet with parchment paper
2. Cut the salmon into large cubes or leave whole, then coat evenly with taco seasoning and avocado oil, adding salt if needed
3. Arrange the salmon on the baking sheet in a single layer and bake near the top of the oven until tender and easy to flake
4. While the salmon cooks, dice the mango, cucumber, red onion, and chop the cilantro, then combine with corn in a bowl
5. Add honey, lime zest, lime juice, and salt to the salsa and toss gently until well mixed
6. Warm the corn tortillas in a skillet with a light coating of avocado oil or steam until soft and pliable
7. Spread refried beans or mashed avocado on each tortilla, add salmon pieces, and gently press to flake
8. Top generously with mango corn salsa and finish with fresh lime juice before serving

Use thick salmon fillets for best texture, as they cook evenly and stay juicy
