Ingredients
Twelve ounces fresh salmon fillet with skin removed and cut into chunks
Half red bell pepper cut into square pieces
Half green bell pepper cut into square pieces
Half yellow bell pepper cut into square pieces
Half orange bell pepper cut into square pieces
One quarter large red onion separated into chunks
Two tablespoons olive oil plus extra if needed
Salt to taste
Fresh cracked black pepper to taste
One lemon cut into wedges for serving
Instructions
Pat the salmon dry with paper towels and cut into evenly sized chunks
Cut all bell peppers into similar sized square pieces
Cut the red onion into chunks and gently separate the layers
