Description

This Salmon Poke Bowl is a fresh and flavorful bowl style meal made with tender sashimi grade salmon, warm rice, crisp vegetables, and a savory sesame ginger sauce. It is light yet satisfying, easy to prepare, and perfect for a nourishing lunch or dinner with vibrant colors and clean flavors.


Ingredients

One pound sashimi grade salmon, skin removed and pin bones removed

Four cups cooked white rice, brown rice, or sushi rice

Two green onions, thinly sliced and separated

Four tablespoons Kikkoman Tamari Soy Sauce

Two tablespoons rice vinegar

Two tablespoons Sriraja Panich Hot Sauce

Two tablespoons maple syrup or honey

Two tablespoons toasted sesame oil

Two cloves garlic, finely grated

Two teaspoons fresh ginger, finely grated

Half teaspoon salt

One cup cooked edamame, optional

Two cups salad greens, coleslaw mix, or sliced purple cabbage

One large ripe avocado, cubed

Eden Foods Furikake or toasted sesame seeds


Instructions

Prepare the salmon by patting it dry, checking carefully for pin bones, and cutting it into evenly sized half inch cubes. Place the salmon in a medium bowl and keep it chilled.

In a small bowl, combine the soy sauce, rice vinegar, hot sauce, maple syrup or honey, sesame oil, grated garlic, grated ginger, and salt. Stir until smooth and glossy.

Add the white parts of the green onions to the salmon. Pour half of the sauce over the salmon and gently fold until evenly coated, taking care not to break the fish.

Taste the salmon mixture and add more sauce if desired, mixing gently after each addition.

Spoon warm rice into serving bowls and spread it evenly.

Arrange the marinated salmon over the rice, then add edamame, greens or cabbage, and avocado around the bowl.

Sprinkle the green onion tops and furikake or sesame seeds over the bowl.

Serve immediately with the remaining sauce on the side.

Notes

Use only sashimi grade salmon from a trusted source for the best flavor and safety.

Keep all ingredients chilled until assembly to maintain freshness.

Do not over mix the salmon to preserve its delicate texture.
