Description
Creamy overnight oats made with raspberries, thick yogurt, oats, and a smooth white chocolate topping for a sweet and satisfying make ahead breakfast.
Ingredients
1/4 cup old fashioned oats
2 tbsp chia seeds
1/3 cup Greek yogurt or coconut yogurt such as Chobani Plain Greek Yogurt or Forager Project Unsweetened Coconut Yogurt
1/4 cup milk or any dairy free milk
2 tsp honey or maple syrup
1/4 cup raspberries washed
1 tbsp white chocolate chips or 1 to 2 squares of white chocolate
1/2 tsp coconut oil

2. Mix the oats, chia seeds, yogurt, milk, honey, and raspberries in a jar or cup and stir until combined.
3. Let the mixture sit for 5 to 10 minutes so it thickens slightly.
4. In a microwave safe bowl melt the white chocolate with the coconut oil in short intervals until smooth.
5. Pour the melted chocolate over the oats and rotate the jar so the top becomes fully coated.
6. Cover and chill in the refrigerator for a few hours or overnight.
7. Add extra raspberries before serving if desired.

Notes
These oats can be prepared up to 4 to 5 days in advance which makes them great for meal prep.
You can use strawberries, blueberries, or blackberries instead of raspberries.
If the mixture becomes too thick stir in a splash of milk before serving.
Greek yogurt gives a thicker texture while coconut yogurt creates a softer and naturally sweet flavor.
