Ingredients
3/4 cup unsweetened almond milk
1/4 cup chia seeds
1 tablespoon maple syrup
1 tablespoon unsweetened almond milk (for mousse)
1 large ripe banana
1 tablespoon raw cacao powder
1 tablespoon almond butter
2 tablespoons chia seeds (for mousse)
1 cup fresh raspberries
1 tablespoon shredded coconut (optional)
1 tablespoon granola (optional)
Fresh mint leaves (optional)
Instructions
• In a medium bowl, mix 3/4 cup almond milk, 1/4 cup chia seeds, and maple syrup until well combined
• Let the mixture sit for 5 minutes, then stir again to prevent clumping
• Cover and refrigerate for at least 30 minutes until thickened into pudding
• Add banana, 1 tablespoon almond milk, cacao powder, and almond butter into a blender
• Blend until smooth and creamy with no lumps
• Transfer mousse to a bowl and stir in 2 tablespoons chia seeds
• Refrigerate the mousse until slightly thickened
• Mash fresh raspberries in a bowl using a fork, keeping some texture
• In serving jars, add a layer of chia pudding at the bottom
• Add a layer of chocolate banana mousse on top
• Add a layer of mashed raspberries
• Repeat layers until jars are filled, finishing with raspberries
• Top with shredded coconut or granola if desired
• Serve immediately or chill before serving
