Description
A juicy Portobello Burger made with marinated grilled mushrooms, toasted brioche style buns, crisp vegetables, and classic condiments for a hearty plant forward meal.
Ingredients
3 tablespoons olive oil
1 and 1 half tablespoons balsamic vinegar
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried thyme
Pinch kosher salt
Pinch freshly ground black pepper
6 portobello mushrooms cleaned
6 burger buns such as Arnold Country Potato Buns, Nature’s Own Brioche Style Buns, or Dave’s Killer Bread Burger Buns
6 slices beefsteak tomato
6 slices red onion
Butter lettuce leaves
Mustard mayonnaise ketchup
Instructions
1. Combine olive oil, balsamic vinegar, basil, parsley, thyme, salt, and pepper in a pitcher and whisk until blended.
2. Pour the mixture into a resealable plastic bag and add the portobello mushrooms, coating them evenly. Marinate up to two hours or grill immediately.
3. Heat a grill or grill pan over medium high heat and cook the mushrooms until lightly charred and tender on each side.
4. Toast the cut side of the buns on the grill until golden.
5. Assemble by placing one grilled mushroom on each bun and topping with tomato, red onion, butter lettuce, and preferred condiments.
Notes
Choose firm mushrooms to maintain texture during grilling.
To soften the flavor of onions, sauté briefly before adding to the burger.
Toast the buns to prevent them from becoming too soft once the toppings are added.
Store leftover mushrooms in an airtight container and reheat in a skillet for best texture.
