Description
Creamy, citrusy, and crunchy bite sized cheese balls with a hidden olive center. Pistachios add texture, Meyer lemon zest brightens the flavor, and fresh basil keeps each bite aromatic. Perfect make ahead appetizer for parties.
Ingredients
6 oz cream cheese, at room temperature
4 oz goat cheese, at room temperature
1/4 cup chopped fresh basil leaves
1 1/2 teaspoons very finely minced garlic
2 teaspoons fresh Meyer lemon zest
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
22 pimiento stuffed green olives, rinsed and patted dry
1/2 cup chopped toasted pistachios
Instructions
1. In a medium bowl, combine cream cheese, goat cheese, basil, garlic, lemon zest, salt, and pepper. Mix until smooth and well blended.
2. Chill the mixture for 30 minutes until firm.
3. Divide into 22 equal portions. Roll each into a ball.
4. Press one olive into the center of each portion. Mold the cheese back around the olive to fully encase it, then roll again to smooth.
5. Roll the balls in chopped toasted pistachios to lightly coat.
6. Chill for at least 2 hours so they set and hold shape.
7. Let sit at room temperature for about 10 minutes before serving. Serve with toothpicks.
Notes
Make ahead: Assemble up to 24 hours in advance. Keep covered and chilled.
Substitutions: Use parsley, dill, or chives instead of basil. For a vegan version, use dairy free cream cheese and goat style cheese. For nut free, coat in crushed pretzels or toasted breadcrumbs.
Flavor tips: Meyer lemon is naturally sweeter. If using regular lemon, reduce zest slightly to taste.
