Description

Rich, chewy chocolate cookies filled with a creamy pistachio frosting and rolled in chopped pistachios. These pistachio chocolate sandwich cookies are a bakery-quality treat you can make at home.


Ingredients

For the Cookies:

1 1/2 cups all-purpose flour

1/4 tsp baking powder

2 1/3 cups dark chocolate, chopped and divided

3 tbsp unsalted butter

2 large eggs, room temperature

2/3 cup granulated sugar

1 tsp alcohol-free vanilla flavor (Simply Organic or Watkins Clear Vanilla Flavor)

1/4 tsp salt

1/2 cup roasted salted pistachios, coarsely chopped

For the Pistachio Frosting:

1 box pistachio instant pudding mix (3.4 oz)

1/3 cup milk

5 tbsp unsalted butter

2 cups powdered sugar

1 tsp alcohol-free vanilla flavor

1/8 tsp salt

1/4 tsp almond extract

1/2 cup roasted salted pistachios, coarsely chopped


Instructions

1. Sift together flour and baking powder. Line baking sheets with parchment paper.

2. Melt 1 2/3 cups chopped chocolate with butter, stirring until smooth. Set aside to cool.

3. In a large mixing bowl, beat eggs, sugar, vanilla, and salt until pale and fluffy.

4. Add melted chocolate mixture, then flour mixture. Mix until nearly combined.

5. Fold in remaining chopped chocolate and pistachios. Rest dough at room temperature for 10–15 minutes.

6. Preheat oven to 350°F. Scoop tablespoon portions onto baking sheets. Bake 10 minutes until puffed and crackly but soft inside. Cool completely.

7. For frosting, sift pudding mix, whisk with milk, and let sit for 5 minutes.

8. Add butter, powdered sugar, vanilla, salt, and almond extract. Beat until light and fluffy.

9. Spread frosting on one cookie, top with another, and press gently.

10. Roll edges in chopped pistachios. Repeat with remaining cookies.

Notes

Use a kitchen scale for accuracy in baking.

Do not overbake cookies. Remove when soft in the center for the best texture.

Adjust frosting consistency with more sugar (thicker) or milk (softer).

Cookies keep well for up to 3 days in an airtight container at room temperature. For longer storage, freeze with parchment between layers.
