Description

Creamy pistachio brigadeiros made with condensed milk, butter, and pistachio cream, then rolled in chopped pistachios for a nutty, luxurious treat.

Ingredients

1 can condensed milk (397g)

20 g unsalted butter

1/4 teaspoon salt

100 g pistachio cream

100 g pistachios, finely chopped

Instructions

1. In a saucepan, add the condensed milk, butter, and salt. Place over medium heat, stirring constantly until the butter melts.

2. Stir in the pistachio cream until fully combined. Continue cooking and stirring until the mixture thickens and pulls away from the sides of the pan.

3. Transfer the mixture into a bowl and refrigerate for 1–2 hours, until firm enough to handle.

4. Scoop about 1 tablespoon of the mixture, then roll into smooth balls with your hands. If sticky, lightly grease your palms with a flavorless oil.

5. Roll each ball into the chopped pistachios until coated. Repeat until all the mixture is used.

Notes

Yields about 10–14 pistachio brigadeiros.

Store in an airtight container for up to 1 week in the refrigerator.

For a twist, try rolling in coconut flakes or cocoa powder instead of pistachios.
