Creamy, chocolatey, and refreshingly minty, these Peppermint White Chocolate Overnight Oats are a protein-rich, make-ahead breakfast treat.
Ingredients
½ cup certified gluten-free quick oats
1 tsp chia seeds
1 tbsp cocoa powder
½ scoop chocolate protein powder
5 drops alcohol-free peppermint flavor (Simply Organic or Watkins Clear)
½ cup unsweetened almond milk
2–3 tbsp white chocolate chips
½ tsp coconut oil
1 crushed candy cane (alcohol-free)
Instructions
1. Add oats, chia seeds, cocoa powder, and protein powder to a jar or bowl.
2. Pour in almond milk and peppermint flavor, then stir until combined.
3. Cover and refrigerate for at least 4 hours or overnight.
4. Once set, microwave white chocolate chips and coconut oil until melted.
5. Pour melted chocolate over oats and sprinkle crushed candy cane on top.
6. Freeze for 10 minutes until chocolate shell hardens.
7. Crack and enjoy!
Notes
You can adjust the texture by adding more or less almond milk to suit your preference.
Use high-quality, alcohol-free peppermint extract for a cleaner flavor.
