Description

Peppermint snickerdoodles are soft, chewy cookies with a refreshing peppermint flavor and a light candy cane coating. They are perfect for sharing or enjoying as a sweet treat at home.


Ingredients

1/2 cup unsalted butter at room temperature

1/2 cup shortening

1 1/2 cups sugar

2 large eggs

1 teaspoon Simply Organic Pure Madagascar Vanilla Extract

1/4 teaspoon peppermint extract

3 cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

1/4 teaspoon salt

3-4 candy canes

1 tablespoon sugar


Instructions

1. Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper or a silicone mat.

2. In a large mixing bowl or stand mixer, cream together the butter, shortening, and 1 1/2 cups sugar until light and fluffy.

3. Add the eggs one at a time, mixing thoroughly after each addition. Blend in the vanilla extract and peppermint extract.

4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.

5. Crush the candy canes in a blender or food processor until fine. Combine the crushed candy canes with 1 tablespoon sugar in a small bowl.

6. Form dough into balls, about 2 tablespoons each. Roll each ball in the candy cane mixture until fully coated. Place on prepared baking sheet, leaving at least 3 inches apart.

7. Bake for approximately 9 minutes until edges are set and centers are slightly soft.

8. Let cookies sit on the baking sheet for 1-2 minutes before transferring to a wire rack to cool completely.

Notes

Bake one tray at a time for best results, around 8 cookies per tray. If baking two trays, rotate halfway through.

Adding a few extra drops of peppermint extract after baking can enhance flavor.

Store cookies in an airtight container at room temperature for up to 5 days.

To freeze, cool completely and store in a freezer-safe container for up to 3 months. Thaw at room temperature and warm briefly for fresh-baked texture.
