Ingredients
8 cups (about 1 kg) mixed berries such as strawberries, blueberries, raspberries, or blackberries
1/2 cup (100 g) granulated sugar
2 tablespoons (15 g) cornstarch
1 teaspoon fresh lemon juice
1/2 teaspoon vanilla flavor (Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor)
1 and 1/2 cups (188 g) all purpose flour
1/3 cup (65 g) granulated sugar (for topping)
1 and 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons (85 g) unsalted butter, cold and cubed
1/2 cup (120 ml) buttermilk, cold
1 tablespoon buttermilk (for brushing)
2 tablespoons coarse sugar (for topping)
Instructions
• Preheat oven to 350°F (177°C) and grease a 9×13 inch baking dish with butter or oil
• In a large bowl gently mix berries, sugar, cornstarch, lemon juice, and vanilla flavor until evenly combined
• Spread the berry mixture evenly into the prepared baking dish
• In another bowl whisk flour, sugar, baking powder, and salt together
• Add cold butter cubes and cut into the flour mixture using a pastry cutter or forks until crumbly texture forms
• Slowly pour in buttermilk while stirring gently until a soft dough forms without overmixing
• Take small portions of dough, flatten lightly, and place over the berry filling covering most of the surface
• Brush the dough with buttermilk and sprinkle coarse sugar on top for a golden crust
• Bake for 45 to 55 minutes until topping is golden brown and filling is bubbling
• Check doneness by inserting a toothpick into the topping, it should come out clean
• Remove from oven and cool for 5 minutes before serving warm
Notes
Use fresh or frozen berries depending on availability, frozen berries may release more juice but still work well
Do not overmix the biscuit dough to keep the topping light and tender
Keep butter cold for best texture in the topping
Homemade buttermilk can be made by mixing 1/2 cup milk with 1 teaspoon lemon juice or vinegar and resting for 5 minutes
Store leftovers covered in the refrigerator for up to 5 days
Freeze baked cobbler for up to 3 months and reheat in oven until warmed through
