Red onion thinly sliced

Red bell pepper thinly sliced

Cherry tomatoes halved

Zucchini sliced into half moons

Yellow squash sliced into half moons

Fresh garlic minced

Fettuccine pasta

Water

Half and half

Dried oregano

Crushed red pepper flakes

Kosher salt

Freshly ground black pepper

Shrimp peeled and deveined

Freshly grated Parmesan made with vegetarian rennet

Fresh basil leaves


Instructions

1. Heat olive oil in a large pot over medium heat until gently shimmering

2. Add red onion and bell pepper and cook while stirring until they begin to soften

3. Stir in cherry tomatoes zucchini and yellow squash and continue cooking until vegetables release moisture

4. Add minced garlic and stir until fragrant without browning

5. Place uncooked fettuccine into the pot and pour in water and half and half

6. Season with oregano crushed red pepper flakes salt and black pepper then stir to separate pasta

7. Bring the mixture to a steady boil then reduce to a simmer while stirring occasionally

8. Cook until pasta is nearly tender and the sauce thickens naturally

9. Add shrimp evenly across the pot and gently press them into the sauce

10. Simmer until shrimp turn opaque and curl slightly

11. Remove from heat and stir in freshly grated Parmesan until melted and smooth

12. Let rest briefly then garnish with fresh basil before serving
