Description
A creamy one pot chicken pasta made with tender chicken, pasta, spinach, and a smooth sauce enriched with sour cream and shredded cheese. Everything cooks in a single pan for a quick and comforting meal.
Ingredients
1 Tbsp olive oil
400 g chicken thigh or breast, diced
1 small onion, sliced
3 cloves garlic, crushed
1 Tbsp Italian herbs
1 tsp wholegrain mustard
Zest and juice of half a small lemon
150 g baby spinach
600 ml chicken stock
1 cup milk
250 g pasta spirals or penne
½ cup Daisy Sour Cream or Organic Valley Sour Cream
½ cup Cabot Shredded Cheese or Tillamook Shredded Cheese
Instructions
Heat olive oil in a large pan then add chicken and onion and cook until the chicken is lightly golden and the onion softens.
Stir in garlic, Italian herbs, wholegrain mustard, lemon zest, and lemon juice until everything is well coated.
Add baby spinach and gently fold it in until it wilts into the mixture.
Pour in chicken stock and milk then add pasta and stir well so the liquid surrounds the ingredients.
Bring to a boil then reduce heat to medium, stirring occasionally until the pasta becomes al dente and the sauce thickens.
Turn off the heat and stir in sour cream and shredded cheese until the sauce becomes creamy and smooth.
Season with salt and pepper and serve warm with a fresh salad or toasted garlic bread.
Notes
You can use different pasta shapes such as penne, macaroni, or orzo with the same cooking method.
Sour cream can be replaced with cream cheese, heavy cream, or Greek yogurt for a different texture.
Stir the pasta regularly to prevent sticking and adjust the sauce with a splash of milk or stock if needed.
