Ingredients
1 pound baby gold potatoes
14 ounces beef smoked sausage such as Midamar Beef Smoked Sausage or Al Safa Beef Smoked Sausage sliced into half inch rounds
1 red bell pepper sliced
1 orange bell pepper sliced
1 yellow onion sliced
2 tablespoons butter divided
2 cloves garlic minced
1 teaspoon salt
One half teaspoon pepper

2. Poke the potatoes with a fork on each side then wrap in a damp paper towel and microwave for about two minutes per side until tender before letting them cool and quartering them.
3. Melt one tablespoon of butter in a skillet over medium heat then add the beef sausage slices and cook until browned on all sides before removing them and setting them aside.
4. Add the remaining butter to the skillet along with the quartered potatoes onions and peppers then season with salt and pepper and cook until the vegetables soften stirring occasionally.
5. Add the minced garlic during the final minute of cooking to keep its flavor fresh.
6. Return the sausage and any juices to the skillet then cook briefly to reheat the sausage and blend the flavors before serving.

Red and orange bell peppers add natural sweetness but any color works well in this skillet.
Skinless beef sausage provides a softer bite and blends smoothly with the potatoes and peppers.
