Small shrimp peeled and deveined with tails removed

Paprika

Large flour tortillas made with alcohol free yeast such as Mission or La Banderita

Cooked long grain white rice

Cooked black beans rinsed and drained

Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese

Shredded lettuce

Well drained pico de gallo

Ripe avocado

Fresh chives


Instructions

3. Heat olive oil in a large skillet over medium high heat and sauté onion and green bell pepper until softened and lightly golden

4. Add garlic and cook briefly until fragrant, stirring to avoid browning

5. Add shrimp to the skillet with cumin and paprika, season with salt and black pepper, and cook gently until shrimp turn opaque and just cooked through

6. Warm the flour tortillas until soft and flexible

7. Lay a tortilla flat and add rice and black beans in the center

8. Top with shrimp filling, shredded cheese, lettuce, pico de gallo, avocado slices, and chopped chives
