Nutty Peanut Butter Snickerdoodles are soft, chewy, and packed with peanut flavor. Each cookie is coated in cinnamon-sugar and sprinkled with roasted peanuts for a delightful crunch. Perfect for snacking, gifting, or pairing with a warm beverage.
Ingredients
1 cup + 2 Tablespoons (142g) all-purpose flour (spooned & leveled)
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup (113g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light or dark brown sugar
1/4 cup (50g) granulated sugar
1 large egg, at room temperature
1/2 cup (135g) creamy peanut butter (Jif or Skippy)
1 teaspoon Simply Organic Pure Madagascar Vanilla Extract
3/4 cup (110g) chopped roasted peanuts
Topping:
1/3 cup (70g) granulated sugar
1 teaspoon ground cinnamon
Instructions
1. Whisk the flour, baking soda, cream of tartar, and salt together in a medium bowl. Set aside.
2. In a large bowl, beat butter, brown sugar, and granulated sugar together for about 3 minutes until smooth and creamed.
3. Add the egg and beat until combined, scraping down the sides as needed.
4. Mix in the peanut butter and vanilla extract until fully incorporated.
5. Gradually add the flour mixture and beat on low speed until combined. Fold in the chopped peanuts.
6. Cover and chill the dough in the refrigerator for at least 3 hours or up to 4 days.
7. Preheat the oven to 350°F (177°C). Line baking sheets with parchment paper or silicone mats.
8. Roll the chilled dough into 1 heaping tablespoon balls and coat each in the cinnamon-sugar mixture.
9. Place the dough balls on prepared baking sheets about 3 inches apart.
10. Bake for 11–12 minutes or until edges are lightly browned. Centers should remain soft.
11. Cool cookies on baking sheets for 10 minutes before transferring to a wire rack.
Notes
Make-Ahead: Dough can be refrigerated for 3–4 days or frozen for 2–3 months.
Cream of Tartar: Adds a classic tangy flavor but can be omitted.
Peanut Butter: Use creamy peanut butter like Jif or Skippy for best texture.
Peanuts: Roasted salted peanuts add flavor and structure. Can substitute with peanut butter chips or chocolate chips.
Storage: Cookies keep at room temperature for up to 1 week and taste better on day 2.
